
Chicken Parmesan Risotto Image
Ingredients:
- 2 boneless skinless chicken breasts cut in chunks
- 1 large tomato chopped
- 1 can 98% fat free cream of chicken
- 1 2/3 c. skim milk
- ½ c. grated Parmesan cheese
- ½ tsp. Italian seasoning
- 2 c. uncooked Minute Rice
- Brown chicken – add soup, milk, cheese and seasoning.
- Bring to a boil, stir in rice & tomato.
- Cover and cook on low 5- 10 minutes, until rice is tender and most of the liquid is now creamy.
